Combine 3/4 cup dry chicken chili mix with 4 1/2 cups water. Bring to a boil while stirring to combine thoroughly. Add meat from 1 rotisserie chicken. Stir in 1 can white beans, 1 can drained whole kernel corn, 1 can drained petite diced tomatoes. Simmer until thickened. Ladle into bowls; top with shredded cheddar cheese. Dollop with sour cream, if desired. Cilantro or sliced green onions add a nice finish, if desired.
